Oven-Roasted Sweet Potatoes





We eat sweet potatoes (and yeah, I know they're yams) at least twice a week.  This is truly the only way I ever make them.  They make a great side dish for any meal: quesadillas, baked fish, steak or chicken salads, etc.  Scott and I will finish off the entire pan.  I've been known to make a meal out of just these potatoes.  They are that good!

These are the spices I use.  Regular paprika is fine too, and I always top it with a sprinkle of garlic salt.  I think that garlic salt and sweet potatoes is the perfect combination.  A twist of sea salt and a squirt of lime is tasty too!


Sprinkle on a teaspoon of each…be generous!  Drizzle on some olive oil.  About 3 tablespoons.  Toss it all together.


Bake at 475 degrees for about 40 minutes.  Halfway through, take the pan out and stir the potatoes around.  You want them slightly browned and crispy on the outside and soft on the inside.  
Leftovers heat up really well, but I doubt you'll have any!

  1. I LOVE sweet potatoes! Usually I'm boring and just bake them, lately I've been making them into "hashbrowns" I guess, cooking them on the stove. This sounds pretty awesome, too!

  2. I'm such a picky eater and I've eaten sweet potatoes before and not liked them and I've eaten them before and liked them. I think it all depends on how they're cooked. I want to eat more of them because I know they're good for you. So, I'm pinning this to try later. :)

  3. We eat these all the time because my husband doesn't like green things. We compromise by his eating green things with a smattering of sweet potatoes.

  4. Keith and I love any type of potatoes. I may post up the one I just made the other day, I've been boiling them first and they cook a lot faster.

  5. Yesssss! I did a variation of this a few weeks ago as sweet potato fries (just cut them into sticks instead of cubes) and they were fan-freaking-tastic. So tasty!!! I'm so glad J eats carbs now! haha! And wouldn't you know--now that he switched his diet over he's actually losing weight ;)

  7. I totally love roasting sweet potatoes, that's pretty much the only way I make them too. I use kosher salt, honey, olive oil, and thyme.

  8. Sweet potatoes (yams) are amazing. I'm kind of a purist, though - just olive oil, salt and pepper for me! Sometimes some rosemary. You've made those sweet potato/black bean tacos, right? That's my other favorite way to eat them except it seems like every vegan recipe that involves potatoes and/or beans also involves cumin, and I'm so sick of cumin I could hurl. (Not to say it's not delicious in your recipe - I just got super burned out on it because it was in EV.ERY.THING I was making for a while)
