Funfetti Cake Pops

So.  Cake pops.  Have you tried them yet?  SO easy.  And delicious.  And I ate 7 for dessert the night I made these.  Just a normal Monday night 'round here...



I came up with this flavor combination idea when I was ravaging the pantry, looking for chocolate chips.  I have no shame.  I've talked about how I needed to, had to, absolutely MUST stop eating marshmallows.  Since I would melt my marshmallows together with chocolate chips, I also needed to stop buying chocolate chips.  The fewer ingredients I have around to make my own personal crack, the greater the chance I won't be able to make my own personal crack.

So, while I didn't have marshmallows in the house, I did have sweetened condensed milk and I was gonna whip me up some fudge.  However, without chocolate chips, I couldn't make fudge.

It was probably better that way.



So I came across this bag of white candy melts...and a box of Funfetti cake mix.

School was still in session at the time, so I knew I could make a last-minute treat for the kiddos for the last day of school.

So instead of grading papers, cleaning the bathrooms, and putting laundry away, I made some cake pops.  Minus the stick.  I like to keep things simple.  And buying those "make your own lollipop" stick things is too complicated for me. (If I was doing these for an actual event, I'd totally go that route though.  These were just going to be devoured by 10 year olds while they watched The Chronicles of Narnia*.  No fanciness needed.)

(Also, I've discovered that you must call them "cake pops" in front of 10 year olds.  They laugh if you call them "cake balls". )


Funfetti Cake Pops

1 Funfetti Cake, baked and cooled
1 can Funfetti frosting
White candy melts
Sprinkles, for decorating

After baking your cakes according to the package directions, allow to cool completely.
In a large pan, crumble the cake and mix in the frosting.  You will have one big sticky mess.

Roll into 1-inch balls and place in a covered pan in the refrigerator or freezer for a few hours or over night.

 Melt the candy melts in the microwave.  Do this at 30 second intervals, stirring in between.  It usually take a minute or two.  Dip each cake ball in the  chocolate, covering it completely.  Allow to dry/cool on wax paper.  I like to store them in the fridge or freezer because I think they taste better cold.

*In case you care, one of my little history buffs asked me if the White Witch/Queen's character was based off of Hitler.  I had explained how the movie took place during WWII [originally why I showed them the beginning of it].  I said, "Wow, that's a good insight, but actually it's based off of Christianity...you know, Aslan is Jesus..." and she said, "Hmmm...that makes sense, but it could totally be about WWII also" and walked away.  
That was on the last day of school.  It's amazing to think of all the things I stuffed into her brain.

  3. These look so good! I've yet to try to make cake pops, but I see them everything. They can't be that difficult...and I do love funfetti :)

  4. I can't really think of anything else to say other than yum! We had cake pops as favors for my baby shower and we had tons leftover. I ate pretty much all of them. So delicious!

  5. Mmm, do I love me some Funfetti cake. Somehow, sprinkles make everything better and happier. Seriously. We should start a campaign to throw sprinkles on angry people and I bet you they'd be happier. Also, I want an entire batch of these, right now.
