I'm still not sure how I feel about these cookies.
Theoretically, they work. I lovelovelove oatmeal cookies (well, oatmeal anything really..) and I never make them with raisins because I hatehatehate raisins. I make my oatmeal cookies with chocolate chips. In a (pathetic) effort to use up my giant-sized bag of Craisins from Costco, I mixed 'em up with white chocolate chips and put them into a cookie. I had an orange leftover from this, so I used some zest and also stirred in orange extract.

They're good. However, these are not as good as classic oatmeal cookies. I'm going to keep playing with this recipe though. I think macadamia nuts would be a good addition (very tropical), or even some slivered almonds. And if you have some coconut on hand, you can really go nuts.
They're very granola-like, so I crumbled up a few in some almond milk and called it a
White Chocolate Granola Cookies
makes 4 dozen
3/4 cup of butter (about a stick and a half), softened
3/4 cup brown sugar
1/2 cup white sugar
2 eggs
1 t. vanilla
1 T. orange zest
1 t. orange extract1 1/2 cups all-purpose flour
1 t. baking soda
1 t. cinnamon
1/2 t. salt
3 cups old-fashioned oats
1 1/2 cups Craisins
1 1/2 cups white chocolate chips
Pre-heat oven to 350 degrees.
With an electric mixer, cream together the butter and sugars. Add the eggs, extracts, and zest; beat well.
Combine the flour, baking soda, cinnamon, and salt in a small bowl. Add to the creamed mixture and mix to combine. Add in the oats, Craisins, and white chocolate chips.
Drop by tablespoons onto a greased cookie sheet.
Bake for 8-10 minutes. Check often. You'll want to pull them out just before they start to brown. Store in an airtight container.

I hatehatehate raisins, too! Scott likes plain oatmeal cookies, which is fine with me, though I do like them with chocolate chips. I'm not a fan of white chocolate, but I admire your creativity to make a new recipe! :)
