Jalapeno Cheese Dip

Alaska is known for its really bad Mexican food.


Or maybe that's just how we refer to it in my  house...

You probably wouldn't expect the frozen tundra to have lots of Mexican restaurants anyway, right?  But I'm telling you, they are everywhere!  On every corner.  In every section of Anchorage.  EVERYWHERE.  With them being so prolific and all, we thought, "Well, they must be decent because they're here."  Yeah.  They're not any good.


The only decent place to get anything resembling the food of the southwest was Chili's.  And then that shut down...*sigh*

So.  If you live in Alaska and know of good Mexican food that is hiding from me, lemme know.  This is a serious question.  I'll laugh if you say Garcia's, Chepo's, or Jalapeno's. 

Until then, this cheese dip is pretty great. 


Jalapeno Cheese Dip
adapted from this recipe

1/2 lb. white American cheese (from the deli, not the pre-packaged kind)
1/2 cup shredded Mexican-Blend (or cheddar) cheese
3 T. finely chopped pickled jalapenos
4 T. jalapeno juice
1 T. butter
1 t. onion powder
1 t. garlic powder
1 t. cumin
1/2 cup milk (add 1/4 a cup at first, and then the other 1/4 cup if necessary to thin it out)

In a small saucepan, combine all the ingredients over low heat.  Stir occasionally and watch it carefully.  When all of the ingredients are melted together, add the rest of the milk if necessary to thin it out.  You might not need to.
Serve warm with chips and/or veggies for dipping.  This would be a great candidate for the Little Dipper crockpot!  You could even make it on the stove and keep it warm in the crock.

  3. What are you doing to me, girl? I JUST posted about how I needed to be good at the Mexican restaurant tonight, but I think I'll be bad instead... or, more likely, I'll be good but come home and make this dip. :) Yum!

  4. Ah, the deli counter! Can't tell you howe many times Ive had a hankering for white cheese dip but could never find white american cheese. Soon as this f-ing detox is over, Im going to make a whole bowl. Thanks for the tip!
