Strawberry Sauce

I said after I was introduced to Crepes with Strawberry Sauce on Valentine's Day that I had found a delicious-looking recipe for a cooked strawberry sauce.  I also said I'd never be making it with fresh strawberries because fresh strawberries, at their cheapest, are $3 for 16 oz. (is one of those little rectangular containers 16 oz?  i think it is.) 

However, this past weekend, I got a Costco membership.
I got 64 oz. of strawberries for $7.  I know, that's not really "a deal", but in Alaska it is perceived as one. 

Then I thought, "Well, I can't just eat them.  That's too easy.  I must make something."  I thought of this sauce immediately.  It was amazing over homemade shortcake biscuits (the recipe on the back of the Bisquick box).

Strawberry Sauce

1 pint of strawberries (stems cut off, washed, and cut in half)
1/2 cup of sugar (I had to use more sugar than originally called for because my strawberries weren't super sweet.  This will work best with really sweet strawberries.)
1 tsp. vanilla extract

Combine all of the ingredients in a saucepan.  Over medium heat, let the mixture cook for about 5 minutes.  Stir frequently.  Take it off the heat and let cool before blending. 



Once it cools off a bit, maybe 30 minutes, blend it up.  I cut up some strawberries to add into the sauce and bulk it up a bit.  It was pretty difficult to not eat this with a spoon!

(I'm also labeling this as "Breakfast" because I think you should make it and eat it with crepes.)
