Baked Oatmeal

A few months ago, as I was learning my way around a slow-cooker, I tried to make Baked Oatmeal.  It didn't turn out so well.  I think it cooked too long.  It came out more like granola.  However, I keep reading about it online and I decided to give it a try again in the oven.  I came across the best recipe for it at Our Best Bites.  I simplified/adapted a bit, but it's really good.  Scott poured milk over his.  I put chocolate chips on top and stuck it in the microwave for 30 seconds to melt the chocolate.  To each his own...


Baked Oatmeal
Dry ingredients:
3 cups of old-fashioned oats
3/4 cup brown sugar
1 t. salt
2 t. baking POWDER
2 t. cinnamon
3/4 cup chocolate chips

Wet ingredients:
2 eggs
1 t. vanilla
1 cup milk
1/3 cup melted butter
2/3 cup applesauce

Mix the dry ingredients together.  Mix the wet ingredients together.  Be sure to let the butter cool a bit before you add it to the eggs.  They'll scramble if the butter is too hot.  Now mix the wet ingredients into the dry ingredients.
Pour into a greased 9" pie plate or 8x8" pan.  Bake at 350 degrees for 40 minutes.  Eat immediately!

  2. There's a variation here that I forgot to add...Substitute 1/2 of the butter with applesauce. Using a whole stick of butter kind of negates the purpose of making this "healthy" dish!
