Apple Pie Oatmeal

Now that I have a new-found obsession (cooking breakfast on the stove), I decided to expand on it.

Apple pie was the only pie I was ever really exposed to as a child.  I'm normally not a pie person.  Unless I'm eating something that is just masquerading as a pie-like treat, that is.  This cookie tastes like the best pie crust you could ever imagine. 

But I often find myself with a surplus of apples.  My options are this breakfast parfait, which is surprisingly filling, or to toss them into oatmeal on the stove.

It tastes a lot like apple pie.  I just need to figure out a way to get a super-buttery, flaky crust into that bowl...


Apple Pie Oatmeal
makes 1 serving

3/4 cup old-fashioned oats
1/2 cup skim milk
3/4 cup almond milk
1-2 T. honey
1/2 finely diced apples
1/4 t. salt
1/2 t. cinnamon
Splash of vanilla

Mix everything together in a small saucepan.  Let it come to a boil over medium heat and cook for 5-7 minutes.  Simple, easy, and healthy.
