Pinned/Did/Done 9/30 (Zucchini help?)

I made this mahi-mahi on Saturday.  I'm not a huge fish eater, but I make fish of some variety for Scott at least twice a week.  That's my cop-out meal.  He gets protein, I get to eat a quesadilla.  Everyone's happy.  He loved this sauce.  It did smell amazing!  Super easy too.  He said, "I'm so glad you know how to make stuff like this…" and I said, "I credit the new stove. It's not from 1999 and all the burners work, so that probably makes a difference."

So. much. zucchini.  I'm running out of things to do with it.  Especially because I don't really like it that much.  I think I'm just going to shred and freeze most of it?  Here are a few things I made…

Stuffed Zucchini.  Like stuffed peppers.  Scott loved these.  I probably had pizza or something that night.

Chocolate Zucchini Bread.  This was fantabulous.  A must-make.  I topped it with homemade chocolate frosting from this brownie recipe.

I also made this regular zucchini bread.  It was good.

Anything else I can make with zucchini?  I've also roasted it in the oven, tossed it with pasta, etc.

I've really just been going back and forth to the same tried and true recipes lately.  Living in a construction zone isn't conducive to recipe development.  Sometimes I think that my creativity came out in Alaska because it had to as a way for me to cope.  Missouri sucked the life of me and killed whatever creativity I had left.  I'm slowly trying to find it again and I have a great fall-flavors bread recipe in the works…maybe I'll get to it this weekend.  You know, preferably before fall is over.

    I like it shredded and frozen then I can throw it into sauces, soups, chilis, whatever.

  2. With J doing the whole30 I'm also struggling with creative ways (without added dairy/sugar/etc) to make zucchini. I just found a paleo chili recipe with zucchini in it! Looks tasty enough.

  3. I'll cook it in olive oil and have it with eggs and feta cheese. I'll also dice it, top with mozzarella cheese, and melt the cheese in the oven or microwave for a quick zucchini Parmesan.

    I do want to make a zucchini bread at some point. Hopefully my family won't hate it!

  4. I wish I enjoyed zucchini more, I just have never been able to get into it.

  5. I made minestrone soup with zucchini chopped up in it the other night. I used what was supposed to be an "Olive Garden inspired" recipe (even though I hate Olive Garden) but forgot half the ingredients at the store so I ended up just dumping in everything I could find that was remotely soup-related in my kitchen. Basically it's just any vegetables you want, mini pasta shells, beans, a vegetable broth and water base, and whatever else you want.

    The point is, zucchini is good in soups. And soups also freeze well for winter.

  6. I have a chocolate zucchini cake recipe. I haven't made it in forever. That and zucchini bread is all I ever make.

  8. I use zucchini in soup. I also cut it into strips and through it in the crockpot with strips of onion and chicken and appropriate spices--shred/chop the chicken when it's cooked and it turns into the most delicious fajita filling!

  9. This may not sound delicious but cream of zucchini soup is awesome. Find a recipe that only uses zucchini, cream and chicken stock as the main ingredients. So good and perfect for fall.

  11. A number of horizontal wooden slats are joined together by corded pulleys which can either gather all the slats at the top of the window to reveal the view..
