Homemade Candy Bars

Just like last year and the one before, I'm starting off the new year with a dessert!

Happy New Year!  And God bless you if you have to go back to work tomorrow.  I've got a few more days off…

I'm not really sure what to call these, other than candy bars.  The recipe says "Kit Kats".  They do not taste like Kit Kats.  They have more of of Twix-texture.  But, again, not really.

My mom made these for the first time in 2011.  If you recall (you probably don't), 2011 was the Christmas I spent at home just taking up space while Scott was in Afghanistan.  I took a nice picture of them, and then meant to share with you.  I didn't.

Last year, she made them again.  Still, I didn't share.  Probably because I showed up in Pennsylvania after our Carnival cruise with a 102* fever and the chills.  I wasn't in a baking mood that week.

However, I have been holding out on you.



These are a unique treat to make for just about any occasion..my mom just happens to insist on them at Christmas.  This year marks the third that I have helped make them.

The middle layers are kind of like a caramel/toffee, and I think a sprinkling of sea salt over the top would make them super rich.

Okay, and maybe a drizzle of salted caramel sauce.  Yep.  That'd be good too.



Homemade Candy Bars
makes a 9x13 pan
adapted from a recipe by Ruth Corle (and my mom said she saw it in an old Grange cookbook too)

1 box Club crackers (90 crackers)
1 cup (2 sticks) butter
1/2 cup milk
2 cups graham cracker crumbs
1 cup packed brown sugar
1/3 cup white sugar
1 t. vanilla
3/4 cup peanut butter
3/4 cup chocolate chips
3/4 cup butterscotch chips
Optional: sea salt for sprinkling on the top

Line the bottom of the ungreased pan with Club crackers (you'll use 30).

In a saucepan, combine butter, milk, graham cracker crumbs, sugars, and vanilla.  Bring to a boil over medium heat.  Boil, stirring constantly, for 5 minutes.  Set a timer!  Then, remove from heat.  Pour half of the sugar mixture over the crackers in the pan.  Add another layer of crackers (30).  Pour the rest of the sugar mixture over that layer.  Add your last layer of 30 crackers.

In a small saucepan, melt the chocolate chips, butterscotch chips, and peanut butter.  Stir until completely smooth.  Pour over the last layer of crackers.  Sprinkle with sea salt if desired.

Place the pan in the fridge to set up for at least 12 hours.  Cut into bars and enjoy!
