Strawberry-Lime Frozen Yogurt

I decided it would be a good idea to let my husband go fishing by himself.  I hate to fish.  I've tried it.  For him, I really have.  I'm just a really bad sport when it comes to putting up with things I don't want to do.  I'm horrible at hiding my feelings; happy, sad, mad, and whatnot.  I tend to pout.

So I know it's in our best interest for me to sacrifice our time together so he can have time to do something enjoyable.  I mean, he doesn't rip my computer away while I'm blogging or tell me I can't go to the gym.  I need to treat him in the same respect.

He came back like this.


And then he gutted and fileted them on the front porch.


I'd show you some pictures of that process, but perhaps my reaction will give you the gist. 

Then he had to seal them into freezer bags.  
It goes without saying that I spent the evening sanitizing the kitchen.

Strawberry Lime Frozen Yogurt
inspired by this recipe at Espresso and Cream

2 cups frozen strawberries (fresh would work too)
1 T. fresh lime juice
2 T. frozen limeaide
1 packet stevia (or use another sweetener and adjust to your tastes)
1 cup plain (or vanilla) Greek yogurt
3 T. almond milk

In a food processor, mix together everything but the milk.  Once combined, add in the milk 1 tablespoon at a time until it hits the consistency you want.  Scoop the mixture into a freezer-safe container and give it a couple of hours to firm up.
The consistency, once frozen, was more like Italian ice than ice cream/frozen yogurt.  We liked it a lot.  If you want it to be creamier, you'll need to allow it to thaw for 20-30 minutes before eating.
