Healthy Blondies

First.  Alexis Bledel on Mad Men.  Yes, please.
There was a day when she was considered for Bella Swan, and I thought she'd be a good fit (truly; change the cast and Twilight could be good).  Thankfully, she was smart enough not to get involved in that debauchery and chose to be an adult instead.

Good for you KStew.  You really won this one.

I'm not even kidding.  I HATE it.  Back in March, I lost my SD card.  I tore the house apart.  I eventually gave up (27 minutes is a long time to search).  I went to Wal-Mart and paid $10 for a new one.  Later that night, as I was crawling into bed, I found it.  On top of my quilt.  "WTF?? Of course this is where it is", I thought.  I vaguely remembered maybe having it upstairs because I was downloading pictures that morning in bed.  Maybe.  It was pretty fuzzy.  But it was possible.  Whatever.  Now I had two so it ended up just being convenient.

Then, weeks later, I lost it again.  I wouldn't have cared so much, except for the fact that I had the pictures of THESE blondies on it and I needed them for a guest post to send to E at Adventures of E and, crap, how the heck was I supposed to make them AGAIN that week and I had already gotten rid of the first batch via the teachers' lounge and geez this was getting to be annoying.

I'm the ONLY person who lives in my house.  I didn't even have anyone to blame.

I tore the couch cushions apart again, and I'm not sure why because that wasn't where it was the first time anyway.

Hesitantly, I did shake out the quilt on my bed because, you know, just in case and all....

It wasn't there.

I made the blondies again, emailed the guest post, and accepted the fact that I had lost my mind.

Then, one morning a week later, there it freaking was.


UNDERNEATH my bed.  But just poking out enough that I could easily have seen it at any given time.

...yet...I hadn't seen it all week.  And that's the side of the bed I get in and out of!

What.  the.   hell.

The really creepy part is I don't know how it traveled upstairs.  My laptop hadn't been upstairs in weeks.  The iPad travels back and forth with me (my first world problem is that my house is too big), but the SD card never goes in the iPad.

Also, as I was washing a dirty pot that same morning, I realized that I couldn't remember what I had cooked in it.  That's how long it had been sitting on the counter.

No wonder I can't keep track of my SD card.




Healthy Blondies
Clearly these aren't natural, vegan, or sugar-free.  But they are so much better for you than a regular version of blondies!


2 T. butter, melted
3 T. peanut butter
1/4 cup unsweetened applesauce
3/4 cup to 1 cup brown sugar (depending on your tastes; it won't alter the consistency)
1 egg
2 t. vanilla
1 cup flour (I usually use whole wheat.)
1 t. baking soda
1/4 t. salt
1 cup mini M&Ms (I mix up chocolate, white, pb, or butterscotch chips some times.  Use whatever you want!)

In a medium-sized saucepan, melt the butter.  stir in the peanut butter and applesauce until combined.  Turn the heat OFF.  Add the sugar, vanilla, and egg.  Mix WELL with a wooden spoon.  Fold in the chocolate chips.  They'll start to melt a little, but that's okay.

Spoon into a greased mini-muffin pan or an 8x8 pan.  Bake at 375* for 7 minutes.  If a toothpick doesn't come out clean, bake for another few minutes, but watch them closely.

  1. I was so excited about Alexis Bledel too. Did you also notice Mr. Belding from saved by the bell was a guest star? It made for a pretty epic episode. I feel your pain for your sd card. I just tore my house apart the other day looking for mine and it's an ongoing search. So annoying. Those blondies look amazing, yum!

    Love these blondies - I just made a very similar recipe for the teachers this week! They always ask for WW friendly stuff. So I'm giving it to them, along with a cupcake buffet, LOL.

    I'm always losing my SD card. That little sucker does not like to keep put. Hate it.

  9. Ha! Your card is possessed.
    I was thinking my keys were possessed, yesterday. When I lost them. For 8 hours. And they turned up outside, in a patch of grass.
    I guess logic would say I dropped them or they were somehow attached to my dog when we went over there... but I'm fairly certain I didn't bring them with me.
    Whatevs.
    Clearly I'm catching up on your blog, since you wrote this post ~2 weeks ago.
    I like this recipe, though, and will make it for the next gathering I attend.
