White Chocolate No-Bake Cookies

Thanks for all of your thoughtful comments on my junk food post.  I'm not directing it at anyone in particular.   Well, yeah, I am:  The parents who think that schools are to blame.  (Sorry, I'm not sorry.)  

We definitely have a national problem on our hands and it didn't start in the classroom.  I just get...irked...when parents try to assume complete control of their child's diet and then wonder why the kid goes nuts when they finally get some sugar (in the form of a cupcake, most likely) into their system.

While I really enjoy reading the website that inspired my post (seriously, I've learned a lot from it), some of those comments REALLY got my blood pressure fired up...

(If you do read the comments, you'll notice that mine has no replies.  Clearly, I'm the only teacher in the bunch :)


Moving on...  to cookies (of course).

I've heard about this magical substance call "biscoff".  I really want to try it.  I've heard it's commonly found in Wal-Mart.  I checked.  No.  Fred Meyer?  Nada.  The place where your money goes to die Safeway?  Not there either. (Coincidentally, Raw Almond Butter was $5 more at Safeway than at Fred Meyer.  Where your money goes to die, indeed.)

I think that when the good food bloggers of the world broadcasted that biscoff could be found at Wal-Mart, they forgot that some of us live in Alaska.  Woe is me.

So.  While I was perusing the over-priced aisles of Safeway, I came across this.

"Hi, I'm expensive flavored-peanut-butter and I look like I taste better than I actually do."

I've seen it before.  I was intrigued.  I love chocolate and peanut butter anything.  But I'm one of those who are also a fan of white chocolate and peanut butter.  Like in these rice crispy treats.

So I decided to try some White Chocolate No-Bake Cookies.

It kind of seems like maybe they're missing something.  I mean, they weren't bad by any stretch.  I still ate them all in two days.  But there was a richness that Peter Pan or Jif Peanut Butter gives to cookies that was just..missing.

So I truly think that you should make these with regular peanut butter.  And maybe add in some marshmallows??  I can't keep marshmallows in the house.  My... uhhhhh... "dog" eats them all...
Sure.  That's it. 



White Chocolate No-Bake Cookies
makes about 20 cookies

1 T. butter
1/4 cup sugar
1/4 cup white chocolate chips
1/4 cup milk
1 t. vanilla
1/4 cup peanut butter
1 cup oats (use quick-cooking oats, as I didn't)
1 cup mini marshmallows (do it!)

In a saucepan, melt the butter over low heat.  Add the sugar, milk, and white chocolate chips.  Let it slowly come to a boil.   Boil for one minute.  No more, no less.
Remove from heat and add the vanilla, PB, and marshmallows.  Once those ingredients have started melting together, stir in the oats.  Mix to combine and then dollop onto a cookie sheet.  Let cool and enjoy.

  2. YUMMY! I totally want these. What's funny, here Safeway is actually pretty affordable, as long as whatever you buy is on sale. Hence my shopping at walmart for non-sale items and Safeway for produce. :)
