Cheesy Croutons and Tomato Soup

Not gonna lie.  I've been known to take my prep period (45 minutes), and do my grocery store run during that time. The after-school rush at the local Fred Meyer makes me wanna crawl into my car and drive home as soon as possible.  That store also seems to the ghetto-hangout for the local adolescent emo population.  High school kids are so weird.

So anyway, in the winter, if I get milk or eggs, I actually will take them into school and put them in the lounge fridge because leaving them in the car will result in them freezing solid.  The last thing I need is a gallon of milk expanding and exploding in my car.

However, last week, I made a grocery store run for some bread and cheese.  I really wanted a grilled cheese sandwich.  (When you live by yourself, grocery buying actually takes more thought.  A lot will go to waste if I don't plan carefully.)

I bought this kind.  Which is apparently the "cheese of the Northwest".


As I pulled back into the school parking lot, the temperature on my car read 50*.  It was sunny.  I thought, "Geez, should I leave that cheese in the car for an hour??  What if it goes bad?"  So different from, "Pleasepleaseplease don't freeze solid before I can make it back to turn on the heat."

I like spring.


 Cheesy Croutons and Tomato Soup
I love making this tomato soup.  I make it an awful lot and freeze it in single-serve portions.  So the tomato soup isn't my recipe, but the croutons are something I've been making for years.

French bread, cut into cubes
Olive oil
Garlic powder, onion powder, pepper (you can use salt too, depending on the type of cheese you use)
Cheese (I like a sharp cheddar.  The one pictured above was wonderful.)

Cut the bread into 1-inch cubes.  Heat a drizzle of olive oil over medium heat in a large skillet.  Toss in the bread cubes and flip them around until lightly browned.  Sprinkle with garlic powder, onion powder, and pepper to taste.  Top the cubes of bread with slices of cheese.  Turn off the heat and cover the pan until the cheese is melted.

Top your soup with the cheesy croutons.  It's like mini-grilled-cheese sandwiches! Yum!
