Whole-Wheat Cinnamon Crepes

A few weeks ago, I wasn't feeling well so I took the afternoon off.  I came home only to realize that I then had to spend part of the afternoon shoveling off the driveway...lest the snowplow plow me in again.

After the shoveling, I wanted some comfort food. 

Some of you do waffles on weekend mornings.  Some do french toast or pancakes.  We do crepes.  Ever since last Valentine's Day, crepes have become our go-to breakfast.  We don't eat them as dessert because we don't stuff them with fancy cream cheese or whipped cream fillings.  We do them up in the simplest way possible, and they're just perfect.

The original recipe in my index is for white flour crepes and they are delicious.  This time, I went all out and did them whole-wheat style.  They were still every bit as tasty.  I added in some cinnamon and I think they would also be very yummy with some cinnamon and sugar sprinkled over the top.  I just happen to like strawberry jam.  Here's a crepe-making tip:  blend the ingredients in a blender, instead of whisking together in a mixing bowl.  That way, your batter won't be positively plagued with lumps...like mine always was until I started using the blender. 



Whole-Wheat Cinnamon Crepes
makes 8 crepes

1 cup of whole-wheat pastry flour
2 eggs

1/2  cup milk

1/2 cup water

1/2 t. cinnamon
1/4 t. salt

2 T. melted butter, cooled

Suggested toppings:
Jam, whipped cream, cinnamon-sugar, and maple syrup


In a blender, mix the flour, eggs, milk, water, cinnamon, salt, and cooled butter until smooth.
Lightly oil an omelet pan and heat to medium-high.  Pour approximately 1/4 of a cup of batter into the pan.  Tilt in a circular motion so the batter coats the bottom of the pan evenly.   Cook for about 2 minutes.  Flip with a spatula and cook the other side for 1-2 minutes.
Add toppings and enjoy!

  4. When I saw the beginning of this blog post, I honestly started to sniff the air... Yes, I know that it's a computer screen, but I felt like I could almost smell these crepes they look so good! Thanks for sharing :)
