Coconut Frozen Yogurt (Cheater Recipe!)

The Anchorage airport is really boring.

I've spent way too many hours of my life there waiting for family and friends to arrive in Alaska.  Way too many hours.

There's nothing to do.  No shops outside of security.  You'd think I would've learned long ago and taken a book or something. 

Of course, if you're bored whilst at the Anchorage airport, you could always spend some time looking at the life-size taxidermy display of the brown bear chasing the black-tailed deer while salmon swim by in the fake river below.

You could also stand in front of the display with your family and take turns photographing each other.

Watching them was my entertainment the last time I was there.

But the Anchorage airport seems to have gotten smart all of a sudden.  They've recently installed a Yogurtland.  I had never been to a Yogurtland before, but Scott came home singing the praises of Yogurtland a couple of weeks ago.

I had heard about it on the news though.  Yes, Yogurtland at the airport made the Anchorage news. 

Apparently, people are going to the airport simply for frozen yogurt these days.

Huh... 

And you thought I made Alaska sound different on purpose.

The upshot of all of this is that the coconut frozen yogurt made me swoon.

I had a stomachache so I said I didn't want any.  Then I ate 3/4 of the yogurt out of Scott's bowl.  Actually, he kind of fed it to me because my stomach hurt.

What?!  It did.   

Before we had even left the airport I had a plan to create my own.  So simple.



Coconut Frozen Yogurt

1.5 quart container of vanilla frozen yogurt
1/2 cup shredded sweetened coconut
1/2 can of cream of coconut (about 7 oz.)

Let the frozen yogurt soften a bit in a large bowl.  Pour in the cream of coconut and shredded coconut.  Mix well.  Spoon back into the original container and re-freeze for at least 12 hours.

*Scott brought up the idea that you could probably top this with toasted coconut.  Give it a try!
